- 1/4 tsp salt
- 4 large eggs
- 1/2 cup coconut oil, melted
- 1/2 cup pure maple syrup
- 1 tsp vanilla extract
- 1/4 cup dairy-free dark chocolate chips optional
Instructions:
Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with paper liners
Cocoa powder, baking soda, coconut flour, and salt should all be combined in a mixing bowl
Whisk the eggs, melted coconut oil, maple syrup, and vanilla extract thoroughly in a different bowl
Once a smooth batter forms, pour the wet ingredients into the dry ingredients and stir
Mix the dairy-free dark chocolate chips into the batter, if you'd like
Pour the batter into each muffin cup, filling it to about two thirds of the way
Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven
After taking the cupcakes out of the oven, let them cool for a few minutes in the muffin tin before moving them to a wire rack to finish cooling
After the cupcakes cool, you can choose to frost them with a dairy-free frosting
